Meet Dewald from Chez Patrick

Dewald Hurter is home.  After spending the last 18 years between Johannesburg, Cape Town and East Londen, it was time to bring his family closer to Port Elizabeth, where this new executive chef of Chez Patrick was born and raised.

Watching Dewald in action made me feel as if I was in the Master Chef kitchen… however, we were not part of a cast and I wasn’t on his pay role, so he couldn’t say anything about my (lack of) skills in the kitchen!

Dewald offered to cook for the Port St Francis World Oceans Day celebrations at no charge, as he is a sportsman himself and admirer of freediver Hanli Prinsloo’s career.  “I will do it for a few breathing tips.”  With little help and no idea about the numbers, Dewald was crowned “King of Comfort Food” with his amazing beef shin “potjie” and generous portions (he now offers his services to anybody with a few surfing tips – any takers?)

Between cutting the onions (at least it didn’t have to be perfect) and watching Dewald crushing the garlic, I have asked him where his interest in food started.  “Where the other kids at school read comic books, I read recipe books.  It was part of me since I can remember and I just love cooking.”

Dewald started his culinary career by studying at The Culinary Academy and trained under Austrian chef Edgar Ossjnik at Buitenverwachting “where we specialised in French Haute Cuisine.”  Dewald has a passion for French sauces, but after the compliments he received on Friday, it is clear that this man can cook anything!

“It is any chef’s dream to cook in an intimate restaurant such as Chez Patrick.  I have the freedom to express myself through the dishes I create, and can adjust the menu according to ingredients available in a specific season.”  Locals are welcome to try his daily special at less than R60 per head.

However, for a chef who once cooked for two weddings on the same day, in total almost 500 guests, Dewald also launched Flair Catering & Events, not to miss out on the adrenaline and pressure of catering for large groups.

“It made perfect sense to offer this service to Chez Patrick’s guests if they require catering for more people than what we can seat in our restaurant, such as weddings, corporate functions or birthdays.  Our team will travel within the Eastern Cape if needed.”  For more information, contact Dewald on dewald@sfff.co.za or 042-294-0121.

Dewald is married and has two daughters, aged 8 and 9 months.  They live in Port St Francis.
